Coffee
Arabica
These are 2 main categories of the species of tree. Arabica makes up 70% of the coffee production each year. It's so much harder to grow and actually taste superior in taste.
Coffee Varieties
The first coffee trees to be cultivated actually originated in Ethiopia, and this same variety, Typica, is still widely grown today.
There are a few other varieties of coffee: Typica, Bourbon, Mundo Novo, Caturra, Catuai, Maragogype, Geisha. Most of these are genetically extremely similar, as they all stem from one variety, Typica.
Processing
Natural: also known as the dry process. This is the oldest method. After harvest, the coffee cherries are spread out in a thin layer to dry in the sun.
Washed: this process remove all the sticky cherry from coffee seed before it is dried. This greatly reduces the chance of something going wrong during drying and the process actually cost more than others.
Honey: common process for Costa Rica. The coffee is mechanically depulped, the depulping can actually be controlled to leave a specific percentage of the flesh on the beans. This process use a lot less water.
Wet - Hulled : This is a special process people use for Sumatra coffee. It bags the beans when the coffee has about 50% of moisture content.
